No-Bake Energy Balls

It's got everyone on the edge, and if you're like me, you've probably been stressing out like there's no tomorrow – and don't even get me on the horrible breakout I'm experiencing. Today, however, I'm giving you a recipe that will hopefully help you stay focused in school, up all day and night, and ready for Christmas week next week. Just don't forget to sleep every once in a while, and power nap whenever you have the chance!
Today, we're talking no-bake energy balls! Made with oats, chocolate, nut butter (whichever you prefer), pistachios, and coconut, these little balls are perfect to keep your energy level as high as possible. Make them in advance and keep them in the fridge, and they'll be good for the whole week. Hungry and no time to eat a full meal? One little ball will fill you up for a couple of hours!
Ingredients
1 cup of rolled oats
1 cup of nut butter (peanut butter, almond butter, Nutella)
1 cup of dark chocolate chips
1/3 cup of pistachios
1/3 cup of coconut
Directions
In a saucepan, melt chocolate chips at medium heat.
Blend oats, nut butter, and pistachios together in a large bowl.
Add the melted chocolate.
Stir until fully blended. You may need to add more oats to make it more malleable.
Let cool until the mixture hardens.
Roll into one-inch balls and dip into coconut.
Let sit on a plate in the refrigerator for at least two hours.
