Chocolate Chip Oats Cookies

You might have guessed, after my last baking blog post, that I've been experiencing with oats. Oatmeal, oat cookies, and next time it'll be an oat exfoliating face mask. However, let's just focus on today with these delicious chocolate chip oats cookies.


If you like oats, I'm sure you've tried billions of recipes before, but oats cookies usually turn out dry ad hard as rock. It's so easy to mess up something made with oats, because rolled oats are naturally dry. You just need the right ingredients and the right recipe to make everything chewy, moist – I hate the word moist, by the way – and mouthwatering.


Ingredients 
1 1/4 cups of unbleached all-purpose flour
3 cups of rolled oats
1 1/2 cups of brown sugar
1 teaspoon of baking soda
1/2 teaspoon of salt
2 teaspoons of vanilla extract
2 eggs
1 cup of chocolate chips
1 cup of raisins

Directions
Preheat oven at 325°F.
Blend together brown sugar, eggs, vanilla, salt, and baking soda.
With an electric mixer, add flour, oats.
Continue mixing and add chocolate chips or raisins, depending on your preference.
Cover a cooking pan with a sheet of parchment paper.
Use an ice cream spoon to scoop the cookie mixture on the cooking pan, leaving one inch in between each ball.
Cook for 12 to 15 minutes.
You may have to do a couple of batches depending on the size of your pan.
